Ingredients
  

For the Salad
  • 1 medium Honeydew Melon Cubed, about 4 cups
  • 4 oz Feta Cheese Crumbled
  • 1/4 cup Fresh Mint Leaves Roughly chopped
  • 1/4 cup Red Onion Very thinly sliced (optional)
For the Lime Vinaigrette
  • 2 Tbsp Fresh Lime Juice
  • 3 Tbsp Extra Virgin Olive Oil
  • 1 tsp Honey
  • 1/4 tsp Black Pepper Freshly ground
  • Pinch Salt To taste

Method
 

Instructions
  1. Prepare the lime vinaigrette: In a small bowl, whisk together the lime juice, olive oil, honey, black pepper, and a pinch of salt until emulsified.
  2. If using, soak the thinly sliced red onion in cold water for 5 minutes to mellow the flavor, then drain thoroughly and pat dry.
  3. In a large mixing bowl, gently combine the cubed honeydew melon and the drained red onion slices (if using).
  4. Drizzle about half of the vinaigrette over the melon mixture and toss very gently to coat. You want to avoid breaking up the melon chunks.
  5. Transfer the dressed melon to a serving platter. Sprinkle evenly with the crumbled feta cheese and the chopped fresh mint.
  6. Drizzle the remaining dressing over the top just before serving. Taste and adjust seasoning if necessary.

Notes

This salad is best served immediately after assembly. For best results, chill the honeydew cubes beforehand. Do not dress the salad more than 15 minutes before serving to maintain the texture of the melon.
