  • 4 cups Honeydew Melon Cubed, seeds removed
  • 1/2 cup Fresh Mint Leaves Packed
  • 2 Limes Juiced
  • 1/4 cup Water Optional, for thinning
Optional Sweetener
  • 1 tablespoon Granulated Sugar or Agave Nectar Adjust to taste

Method
 

Instructions
  1. Prepare the honeydew by removing the rind and seeds, then cut the flesh into rough 1-inch cubes.
  2. Place the honeydew cubes, fresh mint leaves, and lime juice into a high-speed blender.
  3. Blend on high until the mixture is completely smooth. This may take 1 to 2 minutes depending on your blender.
  4. Taste the juice. If the honeydew isn't very sweet, add the optional sugar or agave and blend for another 5 seconds to incorporate.
  5. If the juice is too thick for your preference, add the optional water, 1 tablespoon at a time, until the desired consistency is reached.
  6. Fine strain the juice through a fine-mesh sieve into a pitcher, gently pressing the solids to extract all liquid. Discard the pulp.
  7. Serve immediately over ice, garnished with a small mint sprig or a lime wheel.

Notes

For a sparkling version, skip the added water and instead top each serving with a splash of club soda or sparkling water just before serving. Ensure the melon is very cold before blending for the best results.
