Ingredients
  

For the Green Tea Base
  • 4 cups Water Filtered water recommended
  • 4 bags Green Tea High-quality Sencha or similar
  • 2 tablespoons Granulated Sugar Adjust to taste
For the Honeydew Puree
  • 2 cups Honeydew Melon Cubed, seedless
  • 1/4 cup Water
  • 1 teaspoon Fresh Lime Juice

Instructions
  1. Brew the green tea: Bring 4 cups of water to a near boil (about 175°F or 80°C). Remove from heat and steep the green tea bags and sugar for exactly 5 minutes. Remove the tea bags and allow the tea to cool slightly.
  2. Prepare the honeydew puree: Combine the cubed honeydew, 1/4 cup of water, and lime juice in a blender. Blend until perfectly smooth.
  3. Strain the puree: Pour the honeydew puree through a fine-mesh sieve into a bowl, pressing down on the solids to extract all the liquid. Discard any fibrous pulp left behind.
  4. Combine the mixture: In a large pitcher, combine the cooled green tea and the strained honeydew juice. Stir well until fully incorporated.
  5. Chill: Chill the honeydew iced tea in the refrigerator for at least 1 hour to ensure it is thoroughly cold.
  6. Serve: Fill tall glasses with ice. Pour the chilled honeydew iced tea over the ice. Garnish with small honeydew balls or mint sprigs, if desired.

Notes

For a richer flavor, you can substitute the 2 tablespoons of sugar with simple syrup, added to taste after brewing the tea. Do not over-steep the green tea, as it can become bitter.
