Ingredients

For the Bowl
  • 1 medium Honeydew Melon Chilled and cubed
  • 1 cup Plain Greek Yogurt Full-fat or 2% recommended
  • 2 tablespoons Honey or Maple Syrup Adjust to taste
  • 1/4 cup Mixed Nuts Such as almonds, walnuts, pecans, roughly chopped
  • 1 tablespoon Hemp Seeds
  • 1/2 teaspoon Lime Zest Optional, for brightness
For Toasting Nuts
  • 1/2 teaspoon Coconut Oil

Method

Instructions
  1. Prepare the nuts: Heat coconut oil in a small skillet over medium heat. Add the mixed nuts and toast for 3-5 minutes, stirring frequently until fragrant and lightly browned. Remove from heat and set aside to cool completely.
  2. Prepare the honeydew: If not already done, scoop out the seeds from the honeydew melon. Cut the flesh into bite-sized cubes (about 1 inch).
  3. Assemble the yogurt base: In a small bowl, whisk together the Greek yogurt, honey (or maple syrup), and lime zest (if using) until smooth. Divide the yogurt mixture evenly between two serving bowls.
  4. Layer the melon: Arrange the chilled honeydew cubes attractively over the yogurt in each bowl.
  5. Garnish and serve: Sprinkle the cooled, toasted nuts and the hemp seeds evenly over the melon and yogurt in both bowls.
  6. Serve immediately while the melon is cold for the best flavor and texture contrast.

Notes

This bowl is best assembled right before eating to maintain the crunch of the nuts and the chill of the melon. For added flavor, a light sprinkle of flaky sea salt can enhance the melon's sweetness.
