- Place the cubed honeydew melon, mint leaves, and lime juice into a high-speed blender.
- Add 2 cups of the cold water to the blender. Blend on high until the mixture is completely smooth and liquidized.
- Pour the blended mixture through a fine-mesh sieve placed over a large pitcher, pressing gently on the solids with the back of a spoon to extract all the liquid. Discard any remaining pulp.
- Stir in the remaining 2 cups of cold water and the sugar or agave nectar. Taste the mixture and add more sweetener if desired. Add a pinch of salt if using.
- Chill the agua fresca in the refrigerator for at least 30 minutes to allow the flavors to meld and ensure it is thoroughly cold.
- Serve immediately over ice. Garnish each glass with a lime wheel and a sprig of fresh mint.
Notes
For a more intense mint flavor, you can muddle the mint leaves slightly before adding them to the blender. If your honeydew is very ripe, you may need less added sweetener.
