- In a small bowl or mug, sift the matcha green tea powder to break up any clumps.
- Add the 2 tablespoons of hot water (not boiling) to the sifted matcha. Whisk vigorously using a small whisk (chasen) or a milk frother until a smooth, bright green, frothy mixture forms with no clumps.
- Add the honey to the matcha mixture and whisk briefly until it is dissolved into the concentrate.
- If making a hot latte, heat the milk until steaming, frothing slightly if desired. If making an iced latte, pour the milk over the ice in your serving glass.
- Slowly pour the warmed or cold milk directly into the center of the matcha mixture.
- Gently stir or use a spoon to lightly swirl the milk into the green tea base before serving. Do not over-mix if you want a layered look.
Notes
For an extra flavor dimension, substitute maple syrup for honey. Ensure the matcha is whisked thoroughly; hot water that is too hot will make the matcha taste bitter. This recipe is easily doubled.
