Fruit Mixture
  • 1 pint Strawberries Hulled and sliced
  • 2 cups Pineapple Cubed
  • 2 cups Mixed Melon Cantaloupe and honeydew, cubed
  • 1 cup Blueberries
Honey Lime Dressing
  • 1/4 cup Honey
  • 3 tablespoons Fresh Lime Juice About 2 limes
  • 1 teaspoon Lime Zest
  • 1/4 teaspoon Mint Freshly chopped, optional

  1. Prepare the Fruit: Gently wash, hull, peel, and chop all the fruits according to the notes provided. Place all prepared fruit into a large mixing bowl.
  2. Make the Dressing: In a small bowl, whisk together the honey, fresh lime juice, lime zest, and chopped mint until completely combined and smooth.
  3. Combine Ingredients: Slowly pour the honey-lime dressing over the fruit mixture in the large bowl.
  4. Toss Gently: Using a large rubber spatula, gently fold the fruit and dressing together. Be careful not to mash the softer berries or break up the larger fruit pieces.
  5. Chill (Optional but Recommended): Cover the bowl and refrigerate for at least 15 to 30 minutes to allow the flavors to meld and the fruit to chill thoroughly.
  6. Serve chilled.

Notes

For the best appearance and flavor, prepare the salad no more than 4 hours before serving. If making ahead, add softer fruits like bananas (if using) just before service to prevent browning.
