Ingredients
  

For the Butterfly Pea Tea Base
  • 1.5 tablespoons Dried Butterfly Pea Flowers Or 4 tea bags
  • 2 cups Hot Water Just off the boil
For the Syrup & Assembly
  • 1/2 cup Honey Adjust to taste
  • 1/2 cup Fresh Lemon Juice About 3-4 lemons
  • 4 cups Sparkling Water or Club Soda Chilled
  • 1 cup Ice Cubes
  • 4 slices Lemon For garnish
  • 8 Mint Sprigs For garnish

Method
 

Instructions
  1. Begin by steeping the butterfly pea flowers. Place the dried flowers (or tea bags) in a heatproof pitcher or bowl. Pour 2 cups of hot water over them and let steep for exactly 5 minutes. The water should turn a deep, vibrant blue.
  2. Strain the tea immediately to remove the flowers and allow the blue tea concentrate to cool completely. This will take about 10 minutes, or speed it up by placing the container in an ice bath.
  3. While the tea cools, prepare the honey lemon base. In a small saucepan, gently warm the honey with 1/4 cup of water over low heat until it is fully liquid and easily pourable. Remove from heat and stir in the fresh lemon juice. Set aside.
  4. To assemble the drink, divide the honey lemon mixture evenly among four tall glasses filled with ice cubes. Pour in about 1/4 cup of the cooled blue butterfly pea tea concentrate into each glass.
  5. Slowly top each glass with the chilled sparkling water or club soda. Watch as the acidity from the lemon juice reacts with the blue tea, causing the color to magically shift from deep blue to vibrant purple/pink.
  6. Garnish each Honey Lemon Butterfly Fizz with a fresh lemon slice and a sprig of mint before serving immediately.

Notes

For an extra layer of flavor complexity, add 1 teaspoon of vanilla extract to the honey syrup. If you prefer a less sweet drink, reduce the honey amount by half and only use the lemon juice.
