- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a medium bowl, toss the halved or quartered baby potatoes with 1 tablespoon of olive oil, the minced garlic, butter, Italian seasoning, 1/4 teaspoon of the garlic powder, salt, and pepper. - While the potatoes are roasting, place the bite-sized chicken pieces in the same bowl (no need to wash it). Add the remaining 1 tablespoon of olive oil, the remaining 1/4 teaspoon of garlic powder, and a pinch of salt and pepper. - After the potatoes have roasted for 15 minutes, carefully remove the baking sheet from the oven. Add the seasoned chicken pieces to the other half of the baking sheet, arranging them in a single layer.
- Return the baking sheet to the oven and bake for another 15 minutes, or until the chicken is mostly cooked through and the potatoes are starting to soften.

- Return the baking sheet to the oven and bake for an additional 10-15 minutes, or until the chicken is cooked through, the sauce is bubbly and slightly caramelized, and the potatoes are tender and golden brown.
