Ingredients

For the Peach Filling
  • 6 cups fresh peaches peeled, pitted, and sliced about 1/2-inch thick
  • 3/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup water
For the Biscuit Topping
  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter cut into small cubes
  • 3/4 cup milk
  • 1 tablespoon milk or egg wash for brushing the top

Method

Instructions
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. Prepare the peach filling: In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cornstarch, vanilla extract, cinnamon, and water. Toss gently until the peaches are evenly coated. Pour the mixture into the prepared baking dish.
  3. Prepare the biscuit topping: In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. Stir in the milk until just combined to form a shaggy dough. Do not overmix. Drop spoonfuls of the dough evenly over the peach mixture in the baking dish, leaving small gaps between the biscuits.
  5. Brush the tops of the biscuits lightly with the remaining milk or egg wash and sprinkle with a tiny bit more granulated sugar, if desired, for extra crispness.
  6. Bake for 40 to 45 minutes, or until the topping is golden brown and the peach filling is bubbly and thickened. If the topping browns too quickly, loosely tent with foil.
  7. Let the cobbler cool slightly (about 15-20 minutes) on a wire rack before serving warm. This allows the filling to set properly.

Notes

For best results, use firm, ripe peaches. If fresh peaches are not in season, frozen (without added sugar) or canned (drained) peaches can be substituted. Serve immediately with a scoop of high-quality vanilla bean ice cream or fresh whipped cream.
