  • 1 teaspoon butter or olive oil for cooking

Method
 

  1. In a medium bowl, crack the 4 large eggs. Add the cottage cheese, salt, and black pepper. If you desire a slightly looser and creamier consistency, you can also add the optional 1 tablespoon of milk or unsweetened almond milk at this stage.

  2. Using a whisk or a fork, vigorously whisk the egg and cottage cheese mixture until it is thoroughly combined and relatively smooth. It’s okay if there are a few small cottage cheese curds remaining; they will melt further during cooking. Ensure the salt and pepper are evenly distributed.
  3. Place a non-stick skillet over medium-low heat. Add the butter or olive oil and allow it to melt or heat up until it coats the bottom of the pan. It's important to use medium-low heat to prevent the eggs from cooking too quickly and becoming dry.

  4. Pour the egg and cottage cheese mixture into the heated skillet. Let it sit undisturbed for about 15-30 seconds to allow the bottom to start setting.
  5. Using a spatula, gently push the cooked egg from the edges towards the center of the pan, allowing the uncooked egg to flow underneath. Continue this process, gently folding and stirring the eggs, until they are cooked to your desired consistency. Avoid over-stirring, which can make them tough. The cottage cheese will create a wonderfully creamy and rich texture.
  6. Once the scrambled eggs are cooked through but still soft and moist, remove the skillet from the heat. Serve immediately for the best texture and flavor.
