Ingredients
  

  • 1/2 cup rolled oats
  • 1 scoop (approximately 30g) protein powder (whey, casein, or plant-based, vanilla or unflavored recommended)
  • 1 tablespoon chia seeds
  • 1 tablespoon peanut butter (creamy or crunchy)
  • 1/2 ripe banana, mashed mashed banana
  • 1 cup unsweetened almond milk (or milk of choice)
  • 1/4 teaspoon cinnamon
Optional sweeteners
  • to taste honey, maple syrup, or stevia

Method
 

  1. In a sealable jar, container, or bowl, add the rolled oats, protein powder, chia seeds, and cinnamon. Stir these dry ingredients together thoroughly to ensure the protein powder and chia seeds are evenly distributed throughout the oats.

  2. Next, add the mashed banana and peanut butter to the container. Pour in the unsweetened almond milk (or your preferred milk). If you prefer your overnight oats sweeter, now is the time to add your chosen sweetener, starting with a small amount and adjusting to your taste preference.

  3. Using a spoon or fork, stir all the ingredients together vigorously. Make sure the peanut butter is well incorporated and no pockets of dry oats or protein powder remain. The goal is a smooth, well-combined mixture. Ensure the mashed banana is also distributed evenly.
  4. Once everything is thoroughly mixed, securely cover the container with a lid or plastic wrap. Place the container in the refrigerator and let it chill for at least 4 hours, but ideally overnight.
  5. In the morning, remove the container from the refrigerator. Give the oats a quick stir. If the mixture is too thick for your liking, you can add a splash more milk to reach your desired consistency. Top with extra banana slices, a drizzle of peanut butter, or a sprinkle of cinnamon if desired. Serve cold.

Notes

Properly stored High Protein Peanut Butter Banana Overnight Oats can be kept in an airtight container in the refrigerator for up to 3-4 days. Freezing is not recommended for best texture.
