  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2 large eggs
  • 1 1/2 cups milk (dairy or non-dairy alternative such as almond or soy milk)
  • 2 tablespoons melted butter or coconut oil , plus extra for greasing
  • 1 teaspoon vanilla extract
  • 1/4 cup finely chopped cooked turkey bacon or breakfast sausage (optional, for added protein and flavor)
  • Maple syrup for serving

Method
 

  1. Preheat your griddle or a large, non-stick skillet over medium heat. In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, protein powder, baking powder, salt, and cinnamon. Ensure all the dry ingredients are thoroughly combined to distribute the leavening agents and protein powder evenly.

  2. In a separate medium bowl, whisk together the eggs, milk, melted butter or coconut oil, and vanilla extract until well blended. If you are using chopped turkey bacon or sausage, stir it into the wet ingredients now.

  4. Lightly grease your preheated griddle or skillet with a little butter or oil. Using a tablespoon or a small cookie scoop, drop batter onto the hot surface, creating small, bite-sized portions (about 1-1.5 inches in diameter).
  5. Cook for 2-3 minutes per side, or until golden brown and cooked through. The bites should puff up slightly. You should see small bubbles forming on the surface before they are ready to flip.
  6. Remove the High Protein McGriddle Bites from the griddle and serve immediately. They are best enjoyed warm.
