- In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, protein powder, granulated sugar, baking powder, baking soda, and salt. - Pour the wet ingredients into the bowl with the dry ingredients. Whisk gently until just combined. A few small lumps are perfectly fine; overmixing can lead to tough bites.
- Heat a lightly greased griddle or large non-stick skillet over medium heat. You can test the temperature by flicking a few drops of water onto the surface; they should sizzle and evaporate quickly.
- Using a tablespoon or a small cookie scoop, drop small dollops of batter onto the hot griddle, leaving some space between each bite. Cook for 2-3 minutes per side, or until golden brown and puffed up. You'll see small bubbles forming on the surface of the bites before they're ready to be flipped.
- Carefully flip the bites with a spatula and cook for another 2-3 minutes, or until golden brown and cooked through.
- Remove the cooked High Protein McGriddle Bites from the griddle and serve immediately.

Notes
Allow the High Protein McGriddle Bites to cool completely before storing. Store in an airtight container in the refrigerator for up to 3-4 days, or freeze for up to 2-3 months.
