  • 1 scoop protein powder approximately 25-30g (whey, plant-based, or casein works well)
  • 1-2 teaspoons sweetener of choice honey, maple syrup, agave, or stevia to taste
  • 1/2 teaspoon vanilla extract optional, but recommended for added flavor
  • 1 pinch salt enhances sweetness and overall flavor

  1. In a medium-sized bowl or a jar with a lid, add the chia seeds, protein powder, sweetener of choice, and the pinch of salt. If you're adding vanilla extract at this stage, add it now. Whisk these dry ingredients together thoroughly to ensure the protein powder is well distributed and there are no clumps. This step is crucial for preventing lumps in your final pudding and ensuring an even distribution of flavor.

  2. Pour in the unsweetened almond milk (or your chosen milk). If you are using vanilla extract and have not added it with the dry ingredients, add it now.

  4. Allow the mixture to sit for about 5-10 minutes. During this time, you'll notice the chia seeds starting to absorb the liquid and the mixture will begin to thicken slightly.
  5. After the initial rest, give the mixture another good stir or shake. This is a critical step to prevent the chia seeds from clumping together at the bottom of the bowl or jar. You want to ensure an even gel formation.
  6. Cover the bowl or secure the lid on the jar and refrigerate for at least 2-4 hours, or ideally, overnight. The longer it chills, the thicker and more pudding-like the texture will become. The chia seeds will swell and create a gelatinous consistency.
  7. Once the pudding has reached your desired consistency, give it one final gentle stir. Spoon the High Protein Chia Seed Pudding into bowls or glasses.
