  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • salt to taste
  • black pepper to taste
  • 0.5 cup your favorite BBQ sauce sugar-free option recommended
Ranch Dressing
  • 0.5 cup plain Greek yogurt non-fat or full-fat
  • 2 tablespoons milk dairy or non-dairy
  • 1 teaspoon dried dill
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon dried parsley
  • salt to taste
  • black pepper to taste
  • 1 tablespoon fresh chives finely chopped, optional
Bowl Base & Toppings
  • 2 cups cooked quinoa or brown rice or your preferred grain
  • 2 cups mixed greens romaine, spinach, kale
  • 1 cup roasted sweet potato cubes about 1 medium sweet potato
  • 0.5 cup black beans rinsed and drained
  • 0.5 cup corn kernels fresh, frozen, or canned
  • 0.25 cup cherry tomatoes halved
  • 0.25 cup red onion thinly sliced
  • 2 tablespoons chopped cilantro for garnish

  • 1 sprinkle crushed tortilla chips optional

Method
 

  1. If using chicken breasts, you can either pound them slightly to an even thickness for more uniform cooking or cut them into bite-sized cubes. In a bowl, toss the chicken pieces with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper until evenly coated.

  2. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes per side, or until cooked through and no longer pink in the center. If using cubes, cook until browned and cooked through, about 8-10 minutes total.
  3. Once the chicken is cooked, reduce the heat to low. Pour in your favorite BBQ sauce and stir to coat the chicken completely. Let it simmer gently in the sauce for 1-2 minutes to allow the flavors to meld and the sauce to thicken slightly. Remove from heat.

  4. While the chicken is cooking, prepare the ranch dressing. In a small bowl, whisk together the Greek yogurt, milk, dried dill, garlic powder, onion powder, dried parsley, salt, and pepper until smooth and creamy. If you prefer a thinner dressing, add a little more milk, one teaspoon at a time. Stir in the fresh chives, if using.

  5. Divide your cooked grain (quinoa or brown rice) evenly among your serving bowls. Top the grain with a generous handful of mixed greens.

  6. Artfully arrange the BBQ chicken, roasted sweet potato cubes, black beans, corn kernels, cherry tomatoes, and red onion over the greens.

  7. Drizzle the homemade ranch dressing generously over the entire bowl. Garnish with fresh cilantro. Add any optional toppings you desire, such as avocado slices, pickled jalapeños, or a sprinkle of crushed tortilla chips for an extra crunch.

Notes

Store leftovers in airtight containers in the refrigerator for up to 3-4 days. Keep ranch dressing separate if possible.
Freezing is not ideal for fresh components, but cooked chicken and grain can be frozen separately for up to 1-2 months.
Reheat in microwave or stovetop. Assemble fresh for best texture.
