Ingredients
  

  • 1 cup whole wheat flour
  • 1/2 cup protein powder (whey or plant-based, unflavored or vanilla recommended)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 cup plain Greek yogurt (full-fat or 2%)
  • 1/4 cup water plus more if needed
  • 1 tablespoon olive oil for brushing
  • everything bagel seasoning for topping
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite) Optional

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it. This prevents the bagel bites from sticking.
  2. In a medium mixing bowl, whisk together the whole wheat flour, protein powder, baking powder, salt, garlic powder, and onion powder. Ensure everything is well combined to distribute the leavening and seasonings evenly.

  3. Add the Greek yogurt and 1/4 cup of water to the dry ingredients.

  4. Mix the ingredients with a spoon or spatula until a shaggy dough forms. If the dough seems too dry and crumbly, gradually add more water, a tablespoon at a time, until it comes together. Be careful not to add too much water, as this can make the dough sticky and harder to handle.

  5. Turn the dough out onto a lightly floured surface. Gently knead for about 30-60 seconds, or until the dough is relatively smooth and cohesive. Over-kneading can result in tough bagel bites.
  6. Pinch off small pieces of dough, about the size of a walnut. Roll each piece into a small ball. For a more classic bagel bite shape, you can press a slight indent in the center of each ball with your thumb.
  7. Arrange the dough balls on the prepared baking sheet, leaving a little space between them as they will puff up slightly. If you are adding cheese, sprinkle it over the tops of the bagel bites now.

  8. Brush the tops of the bagel bites lightly with olive oil. Generously sprinkle everything bagel seasoning over the oiled tops. This adds that signature savory crunch.

  9. Bake for 12-15 minutes, or until the bagel bites are golden brown and firm to the touch. The exact baking time may vary depending on your oven.
  10. Let the High-Protein Bagel Bites cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely, or enjoy them warm.

Notes

Leftovers can be stored at room temperature for up to 2 days, refrigerated for up to 5 days, or frozen for up to 2-3 months. Reheat in oven or microwave.
