- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easiest cleanup.
- In a medium bowl, toss the chicken pieces with olive oil, paprika, garlic powder, onion powder, oregano, black pepper, and salt. - Add the chopped red bell pepper, yellow bell pepper, zucchini, and broccoli florets to the bowl with the seasoned chicken. Toss everything together until the vegetables are lightly coated in the seasonings and oil. - Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the vegetables are tender-crisp and slightly caramelized.

- Carefully remove the baking sheet from the oven. Serve immediately, garnished with fresh parsley, a squeeze of lemon juice, or a pinch of red pepper flakes, if desired.
