Ingredients
  

  • 1.5 pounds boneless, skinless chicken breasts or thighs cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon salt or to taste
  • 1 medium red bell pepper seeded and chopped into 1-inch pieces
  • 1 medium yellow bell pepper seeded and chopped into 1-inch pieces
  • 1 medium zucchini trimmed and chopped into ½-inch rounds or half-moons
  • 1 cup broccoli florets
  • 0.5 cup cherry tomatoes

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easiest cleanup.
  2. In a medium bowl, toss the chicken pieces with olive oil, paprika, garlic powder, onion powder, oregano, black pepper, and salt. Ensure the chicken is evenly coated.

  3. Add the chopped red bell pepper, yellow bell pepper, zucchini, and broccoli florets to the bowl with the seasoned chicken. Toss everything together until the vegetables are lightly coated in the seasonings and oil. If your bowl is too small, you can do this directly on the baking sheet.

  4. Spread the seasoned chicken and vegetables in a single layer on the prepared baking sheet. Make sure not to overcrowd the pan, as this will steam the ingredients instead of roasting them, which can lead to sogginess. If necessary, use two baking sheets.
  5. Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the vegetables are tender-crisp and slightly caramelized.
  6. During the last 5-7 minutes of roasting, add the cherry tomatoes to the pan. They will soften and become slightly burst, adding a juicy sweetness to the dish.
