- Start by ensuring your cottage cheese is well-drained. You can do this by placing it in a fine-mesh sieve over a bowl for at least 15-20 minutes to allow excess liquid to drip away. This step is crucial for achieving the right texture and preventing watery pancakes.1 cup full-fat cottage cheese

- Using an immersion blender or a regular blender, process the cottage cheese mixture until it’s completely smooth and creamy. There should be no visible curds. Notes
Leftovers can be refrigerated for up to 3 days. Reheat in the oven, toaster oven, or dry skillet. Can also be frozen for up to 1 month.
