Ingredients

  • 1 cup rolled oats (gluten-free if needed)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup protein powder (chocolate or vanilla flavor recommended)
  • 2 tablespoons almond butter (or any nut/seed butter)
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon honey or maple syrup (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1/4 cup dairy-free milk (almond, soy, or oat), more or less as needed for texture
  • 1/4 cup dairy-free chocolate chips (mini are great!)
  • 1/4 cup rainbow sprinkles (optional, for that cosmic touch!)

Equipment

  • Medium-sized mixing bowl
  • Spatula or sturdy spoon
  • Baking Sheet
  • Parchment paper
  • Small Plate

Method

  1. In a medium-sized mixing bowl, add the rolled oats, protein powder, unsweetened cocoa powder, and a pinch of salt. Whisk these dry ingredients together until they are well combined and there are no large clumps of protein powder. This ensures even distribution of flavor and texture throughout the bites.
1 cup rolled oats, 1/4 cup protein powder, 2 tablespoons unsweetened cocoa powder, 1 pinch salt
  2. To the bowl with the dry ingredients, add the unsweetened applesauce, almond butter, honey or maple syrup, and vanilla extract. Stir these wet ingredients into the dry mixture using a spatula or a sturdy spoon until a thick, dough-like consistency begins to form.
1/2 cup unsweetened applesauce, 2 tablespoons almond butter, 1 tablespoon honey or maple syrup, 1 teaspoon vanilla extract
  3. Gradually add the dairy-free milk, one tablespoon at a time, mixing thoroughly after each addition. Continue adding milk until the mixture reaches a dough-like texture that can be easily rolled into balls. You want it to be moist enough to hold together but not sticky or overly wet. The exact amount of milk can vary depending on the type of protein powder and nut butter used.
    1/4 cup dairy-free milk
  4. Gently fold in the dairy-free chocolate chips. If you're adding rainbow sprinkles for that signature cosmic look, you can either stir them in now or roll the finished bites in them later. Ensure the chocolate chips are evenly distributed.

  5. Take about one tablespoon of the mixture at a time and roll it between your palms to form small, compact balls. If the mixture is too sticky, you can lightly dampen your hands with a little water or a tiny bit of oil.
  6. If you decided not to mix the sprinkles in, spread your rainbow sprinkles onto a small plate. Gently roll each protein bite in the sprinkles until they are coated, giving them that classic cosmic brownie appearance.

  7. Place the formed Healthy Cosmic Brownie Protein Bites on a plate or a baking sheet lined with parchment paper. Refrigerate them for at least 15-20 minutes to allow them to firm up and hold their shape. This step is crucial for achieving the perfect texture.
