Ingredients
  

For the Dough
  • 1 cup water
  • 1/2 cup unsalted butter cut into pieces
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
For the Cinnamon-Sugar Coating
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter melted
Optional Dipping Sauce Ingredients
  • 1/2 cup plain Greek yogurt for a healthier option
  • 1/2 cup heavy cream
  • 1 tablespoon powdered sugar adjust to taste
  • 1/2 teaspoon vanilla extract

Method
 

  1. In a medium saucepan, combine the water, 1/2 cup butter, 1 tablespoon granulated sugar, and salt. Heat over medium heat, stirring occasionally, until the butter is melted and the mixture comes to a gentle boil.

  2. Once boiling, remove the saucepan from the heat. Add the all-purpose flour all at once and stir vigorously with a wooden spoon or spatula until the mixture forms a smooth ball and pulls away from the sides of the pan.

  3. Return the saucepan to low heat and continue to cook, stirring constantly, for about 1-2 minutes. This helps to dry out the dough slightly, which is crucial for a good churro texture.
  4. Transfer the dough to a mixing bowl. Let it cool for about 5 minutes, then beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. The dough will look separated at first but will become smooth and glossy. Stir in the vanilla extract until well combined.

  5. Preheat your air fryer to 375°F (190°C).
  6. This is where the "bites" come in! You have a couple of options. For smaller, bite-sized pieces, you can spoon small dollops of the dough directly into your lightly greased air fryer basket. Alternatively, for slightly more uniform shapes, transfer the dough to a piping bag fitted with a large round or star tip and pipe small zigzags or rounds. Aim for pieces that are about 1-2 inches in size. If piping, be careful not to overcrowd the basket, working in batches as needed.
  7. Carefully place the churro bites into the preheated air fryer basket in a single layer, ensuring they are not touching to allow for even cooking and crisping. Air fry for 8-10 minutes, or until golden brown and puffed up. The exact time will depend on the size of your bites and your air fryer model.
  8. While the churro bites are air frying, melt the 2 tablespoons of butter in a small bowl. In another shallow dish, combine the 1/4 cup granulated sugar and cinnamon.

  9. As soon as the churro bites are done air frying, remove them from the basket (a slotted spoon works well). While they are still hot, immediately toss them in the melted butter, ensuring each bite is coated. Then, roll them in the cinnamon-sugar mixture until evenly coated.
  10. If using, in a small bowl, whisk together the Greek yogurt (or heavy cream), powdered sugar, vanilla extract, and a pinch of cinnamon until smooth and creamy. Adjust the sweetness to your preference.

Notes

Leftover churro bites can be stored airtight in the refrigerator for 2-3 days. Reheat in the air fryer at 300°F (150°C) for 3-5 minutes. Un-coated bites can be frozen for longer storage.
