  • 1 cup Sour Cream Full-fat recommended
  • 1 cup Grillo's Dill Pickles Finely chopped
  • 1/4 cup Grillo's Pickle Relish Sweet or Dill variety, drained
  • 1/2 cup Shredded Cheddar Cheese Sharp, optional for mixing

  • 2 tablespoons Fresh Dill Chopped
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1 tablespoon Pickle Brine Reserved from the pickle jar

  • 1/4 cup Grillo's Dill Pickle Chips Roughly chopped for topping

Instructions
  1. Ensure the cream cheese is fully softened to room temperature. This is crucial for a smooth, lump-free dip.
  2. In a large mixing bowl, combine the softened cream cheese and sour cream. Use an electric mixer or a sturdy spatula to beat them together until the mixture is light, fluffy, and completely smooth.
  3. Fold in the finely chopped Grillo's Dill Pickles, drained pickle relish, shredded cheddar cheese (if using), fresh dill, garlic powder, and onion powder into the cream cheese mixture.
  4. Add the tablespoon of reserved pickle brine. Mix thoroughly until all ingredients are evenly distributed. Taste the mixture and adjust seasoning if necessary (a pinch of salt or more pickle brine can enhance the flavor).
  5. Transfer the dip to a serving bowl. Cover tightly with plastic wrap and chill in the refrigerator for at least 1 hour. Chilling allows the flavors to meld beautifully.
  6. Before serving, remove the plastic wrap and top generously with the roughly chopped Grillo's Dill Pickle Chips. Serve cold with your favorite crackers, vegetable sticks, or potato chips.

Notes

For an extra layer of flavor, reserve some pickle juice from the jar and use it instead of plain water when making homemade crackers to serve alongside. This dip is best served within 3 days.
