- In a medium bowl, whisk together the soy sauce, pineapple juice, brown sugar, olive oil, ground ginger, and minced garlic to create the marinade.
- Add the cubed chicken breast to the marinade, ensuring all pieces are well coated. Cover the bowl and refrigerate for at least 20 minutes, or up to 4 hours, to allow flavors to meld.
- Preheat your grill to medium-high heat (about 400°F or 200°C). If using wooden skewers, soak them in water for at least 30 minutes prior to assembly to prevent burning.
- Thread the marinated chicken, pineapple chunks, red bell pepper pieces, and red onion pieces alternately onto the skewers. Discard excess marinade.
- Place the skewers on the preheated grill. Cook for 6-8 minutes per side, turning occasionally, until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the pineapple shows nice char marks.
- Remove from the grill and let rest for 5 minutes before serving. These are excellent served over rice or with a side salad.
Notes
For an extra layer of flavor, brush any remaining marinade onto the skewers during the last few minutes of grilling. Be sure not to use marinade that has touched raw chicken after the initial marinating period.
