- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
- Prepare the glaze: In a small saucepan, whisk together the barbecue sauce, reserved pineapple juice, brown sugar, and apple cider vinegar. Bring to a simmer over medium heat, stirring constantly until the sugar is dissolved and the sauce thickens slightly (about 3 minutes). Remove from heat.
- Assemble the bites: Thread the kielbasa rounds, pineapple chunks, red pepper pieces, and onion wedges onto the soaked wooden skewers, alternating ingredients for visual appeal.
- Arrange the assembled skewers on the prepared baking sheet. Brush lightly with olive oil.
- Bake for 10 minutes. Remove from the oven, brush generously with half of the prepared glaze, and return to the oven.
- Bake for an additional 8-10 minutes, or until the kielbasa starts to caramelize slightly. Brush with the remaining glaze during the last 2 minutes of cooking to prevent burning.
- Remove from the oven, let cool for a few minutes, and serve warm.
Notes
For an extra smoky flavor, you can grill these skewers instead of baking, brushing with the glaze during the last 5 minutes of grilling.
