Ingredients
  

For the Bites
  • 14 ounces Kielbasa sausage Smoked, sliced into 1/2-inch rounds
  • 1 cup Canned pineapple chunks Drained, reserve 2 tbsp juice
  • 1 large Red bell pepper Cut into 1-inch pieces
  • 1 small Onion Cut into 1-inch wedges
  • 1 tablespoon Olive oil
For the Glaze
  • 1/2 cup Barbecue sauce Your favorite kind
  • 2 tablespoons Reserved pineapple juice
  • 1 tablespoon Brown sugar Packed
  • 1 teaspoon Apple cider vinegar

Method
 

Instructions
  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
  2. Prepare the glaze: In a small saucepan, whisk together the barbecue sauce, reserved pineapple juice, brown sugar, and apple cider vinegar. Bring to a simmer over medium heat, stirring constantly until the sugar is dissolved and the sauce thickens slightly (about 3 minutes). Remove from heat.
  3. Assemble the bites: Thread the kielbasa rounds, pineapple chunks, red pepper pieces, and onion wedges onto the soaked wooden skewers, alternating ingredients for visual appeal.
  4. Arrange the assembled skewers on the prepared baking sheet. Brush lightly with olive oil.
  5. Bake for 10 minutes. Remove from the oven, brush generously with half of the prepared glaze, and return to the oven.
  6. Bake for an additional 8-10 minutes, or until the kielbasa starts to caramelize slightly. Brush with the remaining glaze during the last 2 minutes of cooking to prevent burning.
  7. Remove from the oven, let cool for a few minutes, and serve warm.

Notes

For an extra smoky flavor, you can grill these skewers instead of baking, brushing with the glaze during the last 5 minutes of grilling.
