Ingredients
  

For the Ginger Peach Syrup
  • 1 cup fresh peaches peeled and roughly chopped
  • 1/2 cup fresh ginger peeled and thinly sliced
  • 1 cup granulated sugar
  • 1 cup water
For the Lemonade
  • 1.5 cups fresh lemon juice about 6-8 lemons
  • 3 cups cold water or sparkling water for fizz
  • 1 to taste ice cubes for serving

Method

  1. Prepare the Ginger Peach Syrup: Combine the chopped peaches, sliced ginger, sugar, and 1 cup of water in a small saucepan.
  2. Bring the mixture to a simmer over medium heat, stirring until the sugar is completely dissolved. Reduce heat to low and let it gently simmer for 5 minutes, allowing the flavors to meld.
  3. Remove the syrup from the heat and let it steep for 10 minutes. Once cooled slightly, strain the syrup through a fine-mesh sieve into a jar, pressing down on the solids to extract all the liquid. Discard the solids.
  4. Assemble the Lemonade: In a large pitcher, combine the strained ginger peach syrup, fresh lemon juice, and 3 cups of cold water.
  5. Stir everything together until well combined. Taste and adjust sweetness or tartness by adding more sugar/simple syrup or lemon juice, if necessary.
  6. Chill the lemonade in the refrigerator for at least 30 minutes for the best flavor. Serve over plenty of ice, garnished with peach slices or lemon wheels.

Notes

For a richer flavor, allow the syrup to cool completely before mixing with the lemon juice. If you prefer a richer peach flavor, blend the steeped peaches/ginger slightly before straining.
