- In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, and chili flakes. Set aside.
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. If using tofu, add the cubes and cook, stirring occasionally, until golden brown and slightly crispy on all sides, about 5-7 minutes. Remove the tofu and set aside.
- Add the remaining 1 tablespoon of oil to the hot wok. Add the trimmed garlic scapes and red bell pepper. Stir-fry for 3-4 minutes until the scapes become bright green and slightly tender-crisp.
- Add the sliced shiitake mushrooms to the wok and continue to stir-fry for another 2 minutes until they soften slightly.
- Return the cooked tofu (if used) to the wok. Whisk the cornstarch slurry one more time and pour it into the wok, stirring constantly. The sauce should thicken quickly.
- Stir everything together until evenly coated with the thickened sauce, about 1 minute. Serve immediately over steamed rice or noodles.
Notes
Garlic scapes are the tender flowering stalks of hardneck garlic plants. Ensure they are fresh. For extra flavor, add 1 minced clove of fresh garlic along with the vegetables during the last minute of stir-frying.
