  • 1 pint Cherry or Grape Tomatoes Halved
  • 8 ounces Fresh Mozzarella Pearls (Bocconcini) Drained
  • 24 Fresh Basil Leaves Small to medium size
  • 1/4 teaspoon Coarse Sea Salt
  • 1/8 teaspoon Freshly Ground Black Pepper
For the Glaze
  • 1/4 cup Balsamic Vinegar
  • 1 teaspoon Olive Oil High quality

  1. Prepare the balsamic glaze: In a small saucepan over medium-low heat, gently simmer the balsamic vinegar until it reduces by half and thickens enough to coat the back of a spoon (about 8-10 minutes). Set aside to cool slightly; it will thicken more as it cools.
  2. Assemble the bites: Using toothpicks or small appetizer skewers, carefully thread the ingredients onto each skewer in the following sequence: a cherry tomato half (cut side facing center), one folded basil leaf, and one mozzarella pearl.
  3. Repeat the layering process if desired, ensuring each skewer has a balanced ratio—aim for 2 tomato halves and 1 mozzarella pearl per skewer.
  4. Arrange the assembled Caprese bites attractively on a serving platter.
  5. Gently drizzle the prepared balsamic glaze over the bites just before serving.
  6. Season lightly with sea salt and freshly ground black pepper. Serve immediately for the freshest flavor.

Notes

For an extra savory flavor, you can substitute the olive oil drizzle with a few drops of high-quality extra virgin olive oil over the finished bites instead of mixing it into the glaze reduction. Make sure the tomatoes are dry before assembling for the best texture.
