Flavorful Grilled Veggie Skewers

Ingredients
  

Vegetables
  • 1 large Red bell pepper Cut into 1-inch chunks
  • 1 large Zucchini Cut into 1-inch thick rounds
  • 1 large Yellow squash Cut into 1-inch thick rounds
  • 1 pint Cherry tomatoes
  • 8 Cremini mushrooms Wiped clean
  • 1 medium Red onion Cut into 1-inch wedges
Marinade
  • 1/4 cup Olive oil
  • 3 tablespoons Balsamic vinegar
  • 2 cloves Garlic Minced
  • 1 tablespoon Dried oregano
  • 1 teaspoon Smoked paprika
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Method
 

Instructions
  1. If using wooden skewers, soak them in water for at least 30 minutes prior to assembly to prevent burning.
  2. In a small bowl, whisk together all the marinade ingredients: olive oil, balsamic vinegar, minced garlic, oregano, smoked paprika, salt, and pepper.
  3. In a large bowl, combine all the prepared vegetables. Pour the marinade over the vegetables and toss gently until everything is evenly coated. Let the vegetables marinate at room temperature for 15 minutes, or chill for up to 2 hours.
  4. Thread the marinated vegetables onto the soaked skewers, alternating colors and types for visual appeal. Ensure the vegetables are packed snugly but not overly tight.
  5. Preheat your grill to medium-high heat (about 400°F or 200°C). Lightly oil the grill grates to prevent sticking.
  6. Place the skewers on the preheated grill. Grill for 12 to 15 minutes, turning every 3-4 minutes, until the vegetables are tender-crisp and have nice char marks.
  7. Remove from the grill and serve immediately. These are excellent served with a sprinkle of fresh parsley.

Notes

For added flavor, grill halloumi cheese cubes alongside the vegetables. Adjust cooking time based on your grill's heat consistency.
