  • 2 tablespoons unsweetened cocoa powder (optional, for a chocolatey version)
  • 1 teaspoon vanilla extract

Method
 

  1. If your Medjool dates are not soft and sticky, soak them in warm water for about 10 minutes. Drain them thoroughly and pat them dry with a paper towel. This step ensures they blend smoothly and create the sticky base for your energy balls.

  2. In a medium bowl, combine the rolled oats, chia seeds, shredded coconut flakes, and cocoa powder (if using). Add a pinch of salt to enhance the flavors. Stir these dry ingredients together until well distributed.

  3. In a food processor, add the pitted and drained dates. Process them until they form a thick paste or ball. This may take a minute or two, and you might need to scrape down the sides of the food processor occasionally.
