- Preheat your oven to 425°F (220°C). Lightly grease a 9-inch pie dish.
- Carefully place one pie crust into the bottom of the pie dish, pressing it gently into the edges. Trim any excess dough.
- In a medium bowl, combine the canned cherry pie filling, fresh/frozen cherries (if using), lemon juice, and almond extract (if using). Stir gently until just combined.
- Pour the cherry mixture evenly into the bottom crust. Place the second pie crust over the top. Crimp the edges of the top and bottom crusts together to seal.
- Cut several slits (vents) into the top crust to allow steam to escape during baking. Brush the entire top crust lightly with the beaten egg wash and sprinkle evenly with turbinado sugar.
- Bake for 15 minutes at 425°F (220°C). Then, reduce the oven temperature to 375°F (190°C) and continue baking for another 40-45 minutes, or until the crust is golden brown and the filling is bubbling.
- Let the pie cool completely on a wire rack for at least 3 hours before slicing and serving. This allows the filling to set properly.
Notes
To prevent the edges from burning, cover the crimped crust with aluminum foil halfway through the baking time. This recipe relies heavily on pre-made filling for the 'effortless' aspect, but adding fresh fruit elevates the taste instantly.
