Ingredients
  

For the Apricot Glaze
  • 1/2 cup apricot preserves
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1/4 teaspoon ground ginger
For the Chicken
  • 1.5 lbs boneless, skinless chicken breasts about 4 breasts

Method

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish or line it with parchment paper.
  2. In a small bowl, whisk together the apricot preserves, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, and ground ginger until thoroughly combined. This is your apricot glaze.
  3. Place the chicken breasts in the prepared baking dish. Brush about half of the apricot glaze evenly over the top of the chicken breasts.
  4. Bake for 20 minutes. Carefully remove the dish from the oven, brush the remaining glaze over the chicken, and return to the oven.
  5. Continue baking for another 10-15 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and the sauce is bubbly and slightly caramelized. Cooking time may vary based on chicken thickness.
  6. Let the chicken rest for 5 minutes before slicing or serving whole. Garnish with fresh parsley if desired, and serve immediately over rice or alongside steamed vegetables.

Notes

For extra shine, use low-sugar apricot preserves. If the glaze starts to brown too quickly during the last 10 minutes of baking, loosely tent the dish with aluminum foil.
