- Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish or line it with parchment paper.
- In a small bowl, whisk together the apricot preserves, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, and ground ginger until thoroughly combined. This is your apricot glaze.
- Place the chicken breasts in the prepared baking dish. Brush about half of the apricot glaze evenly over the top of the chicken breasts.
- Bake for 20 minutes. Carefully remove the dish from the oven, brush the remaining glaze over the chicken, and return to the oven.
- Continue baking for another 10-15 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and the sauce is bubbly and slightly caramelized. Cooking time may vary based on chicken thickness.
- Let the chicken rest for 5 minutes before slicing or serving whole. Garnish with fresh parsley if desired, and serve immediately over rice or alongside steamed vegetables.
Notes
For extra shine, use low-sugar apricot preserves. If the glaze starts to brown too quickly during the last 10 minutes of baking, loosely tent the dish with aluminum foil.
