Ingredients
  

  • 1 pound ground beef or turkey
  • 1 small onion, finely chopped
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 1 (10-ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 (8-ounce) package cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder

Method
 

  1. In a large skillet over medium-high heat, cook the ground beef or turkey until browned. Drain off any excess grease. Add the chopped onion and cook until softened, about 5-7 minutes.

  3. Reduce the heat to low. Add the softened cream cheese, stirring until it’s mostly melted and incorporated into the bean mixture.

  4. Mix in the shredded cheddar cheese, sour cream, mayonnaise, chili powder, cumin, and garlic powder. Stir well until everything is combined and the cheese is melted and creamy.

  5. Let the dip simmer gently for about 10-15 minutes, stirring occasionally, allowing the flavors to meld together and the dip to thicken slightly. Season with salt and black pepper to taste.

Notes

This dip stays fresh in the refrigerator for up to 3-4 days. It can also be frozen for up to 2-3 months. Reheat gently on the stovetop or in the microwave.
