Method
- In a large pot or Dutch oven over medium-high heat, cook the ground beef (or your chosen sausage) until it’s browned and crumbled. Drain off any excess grease. Add the chopped onion to the pot and cook until softened and translucent, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn it.1 pound ground beef or ground sausage (pork or turkey), 1 large onion, finely chopped, 2 cloves garlic, minced
- Pour in the undrained can of Rotel diced tomatoes and green chilies and the undrained can of diced tomatoes. Stir in both the condensed cream of mushroom soup and the condensed nacho cheese soup. Mix everything together until well combined.1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained, 1 (15 ounce) can diced tomatoes, undrained, 1 (10.5 ounce) can condensed cream of mushroom soup, 1 (10.5 ounce) can condensed nacho cheese soup
- Add the cubed processed cheese directly into the pot. Stir continuously over medium-low heat until the cheese is completely melted and incorporated into the mixture, creating a smooth, creamy sauce. This step is crucial for achieving that characteristic gooey texture.1 (8 ounce) package processed cheese, cubed (like Velveeta, cut into 1-inch pieces)
- Once the cheese is melted and the dip is smooth, reduce the heat to low. Let the dip simmer gently for at least 10-15 minutes, stirring occasionally, to allow the flavors to meld together beautifully. The longer it simmers, the richer the taste will become.
- Transfer the EASY ROTEL DIP to a serving bowl. Garnish with your favorite optional toppings, such as fresh cilantro, diced jalapeños, or a dollop of sour cream. Serve immediately with a generous platter of tortilla chips for dipping.Optional toppings: chopped cilantro, diced jalapeños, sour cream, tortilla chips
Notes
To store, let the dip cool slightly, then transfer it to an airtight container. Refrigerate for up to 3-4 days. To reheat, gently reheat in a saucepan over low heat, stirring frequently, or in the microwave in short intervals, stirring between each. If thickened, stir in milk or cream. Can be frozen for up to 2 months.
