- In a medium-sized bowl or an airtight container (like a mason jar or a glass food storage container), add the rolled oats, chia seeds, flaxseed meal, and brewer's yeast (if using). Stir these dry ingredients together thoroughly to ensure they are evenly distributed. - To the same bowl or container, add the peanut butter, honey or maple syrup, and vanilla extract. Pour in your chosen milk and add a pinch of salt. - Stir everything together until well combined. Make sure there are no clumps of peanut butter or dry oats stuck at the bottom of the container. Scrape down the sides to ensure all ingredients are incorporated. The mixture should be a thick, pourable consistency. If it seems too thick, you can add another tablespoon or two of milk.
- Cover the container tightly with a lid or plastic wrap. Place it in the refrigerator and let it chill for at least 4 hours, but ideally overnight. This overnight chilling period is crucial for the oats to soften, the chia seeds to gel, and all the flavors to meld together beautifully.
- In the morning, give the overnight oats a good stir. They should have a thick, creamy, pudding-like texture. If they are too thick for your liking, add a splash more milk and stir. Notes
These overnight oats stay fresh in the refrigerator for up to 3-4 days. They can also be frozen for up to 1-2 months, then thawed in the refrigerator overnight. Gently warm if desired.
