- Preheat your oven to 400°F (200°C). Line a standard 12-cup muffin tin with paper liners or grease thoroughly.
- In a large bowl, whisk together the 2 cups of flour, granulated sugar, baking powder, baking soda, and salt for the muffin batter.
- In a separate medium bowl, whisk together the egg, milk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are fine.
- Gently fold in the diced peaches into the batter until evenly distributed.
- Prepare the brown sugar topping: In a small bowl, cut the cold butter into the brown sugar and 1/4 cup flour using your fingers or a pastry blender until coarse crumbs form.
- Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full. Sprinkle a generous portion of the brown sugar topping over the top of each muffin.
- Bake for 5 minutes at 400°F, then reduce the oven temperature to 375°F (190°C) and continue baking for another 17-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 5 minutes before transferring to a wire rack.
Notes
If using frozen peaches, do not thaw them before adding to the batter. For extra flavor, you can toss the peaches in 1 teaspoon of flour before folding them in.
