- In a small bowl, whisk together the fresh lemon juice, 2 tablespoons of olive oil, chopped fresh parsley, chopped fresh dill (if using), garlic powder, and red pepper flakes (if using). Season with a pinch of salt and pepper. - Toss everything together gently to coat evenly with the sauce. Cook for an additional 1-2 minutes, allowing the sauce to thicken slightly and the flavors to meld.
- Serve the Easy Mediterranean Chicken Stir Fry immediately. It’s delicious on its own or served over your favorite grains like quinoa, rice, or couscous.
Notes
Store in an airtight container in the refrigerator for up to 3-4 days. Can be frozen for up to 2-3 months.
