Ingredients
  

For the Stir Fry:
  • 1.5 pounds boneless, skinless chicken breasts or thighs cut into bite-sized pieces
  • 2 tablespoons olive oil divided
  • 1 large red onion thinly sliced
  • 2 bell peppers any color, thinly sliced
  • 1 zucchini thinly sliced
  • 1 cup cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted and halved
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • to taste salt and freshly ground black pepper

For the Lemon-Herb Sauce:
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon fresh dill chopped (optional, but highly recommended)
  • 1/2 teaspoon garlic powder
  • Pinch red pepper flakes (optional, for a touch of heat)

Method
 

  1. In a small bowl, whisk together the fresh lemon juice, 2 tablespoons of olive oil, chopped fresh parsley, chopped fresh dill (if using), garlic powder, and red pepper flakes (if using). Season with a pinch of salt and pepper. Set aside.

  2. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook, stirring occasionally, until the chicken is golden brown and cooked through, approximately 5-7 minutes. Remove the chicken from the skillet and set aside.

  3. Add the remaining 1 tablespoon of olive oil to the same skillet. Add the sliced red onion and cook for 2-3 minutes until it begins to soften.

  4. Add the sliced bell peppers and zucchini to the skillet. Stir-fry for another 5-7 minutes, or until the vegetables are tender-crisp.

  5. Stir in the minced garlic, dried oregano, and dried thyme. Cook for 1 minute until fragrant. Add the halved cherry tomatoes and cook for another 2-3 minutes, until they just begin to soften.

  6. Return the cooked chicken to the skillet with the vegetables. Add the halved Kalamata olives. Pour the prepared lemon-herb sauce over the mixture.

  7. Toss everything together gently to coat evenly with the sauce. Cook for an additional 1-2 minutes, allowing the sauce to thicken slightly and the flavors to meld.
  8. Serve the Easy Mediterranean Chicken Stir Fry immediately. It’s delicious on its own or served over your favorite grains like quinoa, rice, or couscous.

Notes
