Ingredients
  

Dry Ingredients
  • 3 cups Old-fashioned rolled oats Do not use instant oats
  • 1 cup Raw pecans or almonds Roughly chopped
  • 1/2 cup Unsweetened shredded coconut
  • 1/2 teaspoon Ground cinnamon
  • 1/2 teaspoon Salt
Wet Ingredients & Add-ins
  • 1/2 cup Pure maple syrup Grade A Dark or Very Dark
  • 1/4 cup Melted coconut oil or neutral vegetable oil
  • 1 teaspoon Vanilla extract
  • 1 cup Dried cranberries or raisins Added after baking

Method
 

Instructions
  1. Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, chopped nuts, shredded coconut, cinnamon, and salt. Whisk well to ensure everything is evenly distributed.
  3. In a small saucepan or microwave-safe bowl, gently warm the maple syrup and oil together until just combined and slightly runny. Remove from heat and stir in the vanilla extract.
  4. Pour the wet mixture over the dry ingredients. Use a spatula to thoroughly toss everything together until all the oats and nuts are evenly coated. Spread the mixture out in a single, thin layer onto the prepared baking sheet.
  5. Bake for 25 to 30 minutes, stirring gently halfway through (around the 15-minute mark) to promote even browning. The granola is done when it is golden brown and fragrant.
  6. Remove the baking sheet from the oven. If you prefer clumpy granola, avoid stirring now. Let it cool completely on the baking sheet (about 30-40 minutes). Once cool, stir in the dried fruit.
  7. Store the cooled granola in an airtight container at room temperature for up to 2 weeks.

Notes

For extra crunch and flavor depth, try toasting the nuts slightly before adding them to the main mix. Do not overbake, as the sugar content can cause it to burn quickly after reaching the perfect color.
