  • 0.33 cup unsalted butter, melted
  • 2 tablespoons erythritol (or other keto-friendly sweetener)
  • 1 pinch salt
Filling
  • 8 ounces cream cheese, softened
  • 1 cup creamy peanut butter (natural, no sugar added)
  • 0.5 cup heavy whipping cream
  • 0.5 cup powdered erythritol (or other keto-friendly powdered sweetener)
  • 1 teaspoon vanilla extract
Optional toppings
  • sugar-free chocolate chips

  • chopped peanuts

Method
 

  1. In a medium bowl, combine the almond flour, melted unsalted butter, 2 tablespoons of erythritol, and a pinch of salt.

  2. Stir until the ingredients are well combined and the almond flour is moistened. The mixture should resemble wet sand.
  3. Press the almond flour mixture evenly into the bottom and up the sides of a 9-inch pie plate to form the crust. Use the bottom of a glass or your fingers to ensure it's packed tightly.
  4. Place the pie plate in the freezer while you prepare the filling.
  5. In a large mixing bowl, beat the softened cream cheese until smooth and creamy, using an electric mixer on medium speed.

  6. Add the creamy peanut butter to the cream cheese and continue beating until thoroughly combined and smooth.

  7. In a separate medium bowl, whip the heavy whipping cream until stiff peaks form.

  8. Gradually add the ½ cup of powdered erythritol and the vanilla extract to the whipped cream, beating until well incorporated and sweet.

  9. Gently fold about half of the whipped cream mixture into the peanut butter and cream cheese mixture until just combined. Be careful not to overmix.
  10. Then, gently fold in the remaining whipped cream until the filling is smooth and has a uniform color.
  11. Pour the creamy peanut butter filling into the chilled almond flour crust, spreading it evenly with a spatula.
  12. Smooth the top of the pie with the back of a spoon or a spatula.
  13. Cover the Easy Keto Peanut Butter Pie with plastic wrap or foil.
  14. Refrigerate for at least 4 hours, or preferably overnight, to allow the pie to set completely.
