- Prepare the grill for medium-high heat (about 400°F or 200°C). Lightly brush the grill grates with oil to prevent sticking.
- Brush both sides of the pineapple slices evenly with melted coconut oil.
- Place the pineapple slices on the hot grill. Grill for 3-4 minutes per side, until distinct grill marks appear and the fruit has softened slightly.
- While the pineapple grills, prepare the caramel sauce. In a small saucepan over medium heat, melt the butter. Stir in the brown sugar and cinnamon until the sugar is dissolved and the mixture is bubbling gently.
- Remove the saucepan from the heat. Carefully stir in the dark rum (if using) and mix well until smoothly combined.
- Once the pineapple is grilled, immediately transfer the slices to a serving platter.
- Generously spoon the warm brown sugar caramel sauce over the hot grilled pineapple slices right before serving. Serve immediately, optionally topped with a scoop of vanilla ice cream.
Notes
For a non-alcoholic version, substitute the rum with 2 tablespoons of pineapple juice or water to thin the sauce slightly. Ensure the grill is hot enough to achieve good caramelization quickly.
