Ingredients
  

For the Grilled Pineapple
  • 1 whole Ripe Pineapple Peeled, cored, and sliced into 1/2-inch thick rounds
  • 1 tablespoon Coconut Oil Melted
For the Brown Sugar Caramel
  • 1/2 cup Light Brown Sugar Packed
  • 4 tablespoons Unsalted Butter
  • 1/4 teaspoon Ground Cinnamon
  • 2 tablespoons Dark Rum (optional) For richer flavor

Instructions
  1. Prepare the grill for medium-high heat (about 400°F or 200°C). Lightly brush the grill grates with oil to prevent sticking.
  2. Brush both sides of the pineapple slices evenly with melted coconut oil.
  3. Place the pineapple slices on the hot grill. Grill for 3-4 minutes per side, until distinct grill marks appear and the fruit has softened slightly.
  4. While the pineapple grills, prepare the caramel sauce. In a small saucepan over medium heat, melt the butter. Stir in the brown sugar and cinnamon until the sugar is dissolved and the mixture is bubbling gently.
  5. Remove the saucepan from the heat. Carefully stir in the dark rum (if using) and mix well until smoothly combined.
  6. Once the pineapple is grilled, immediately transfer the slices to a serving platter.
  7. Generously spoon the warm brown sugar caramel sauce over the hot grilled pineapple slices right before serving. Serve immediately, optionally topped with a scoop of vanilla ice cream.

Notes

For a non-alcoholic version, substitute the rum with 2 tablespoons of pineapple juice or water to thin the sauce slightly. Ensure the grill is hot enough to achieve good caramelization quickly.
