  • 2 large flour tortillas (10-12 inch)
  • 4 slices your favorite melting cheese (cheddar, Monterey Jack, provolone, or a blend)
  • 2 tablespoons unsalted butter softened
  • 1/4 cup cream cheese softened
  • 1 tablespoon milk or heavy cream
  • 1/4 teaspoon garlic powder
  • 1 pinch salt
  • 1 pinch black pepper
  • Optional: Cooked and shredded chicken, seasoned ground beef, black beans, or sautéed vegetables

Method
 

  1. In a small bowl, combine the softened cream cheese, milk or cream, garlic powder, salt, and pepper. Whip with a fork or a small whisk until smooth and well-combined. This creamy spread will add an extra layer of indulgence and help bind the cheese within your burrito.

  2. Lay one flour tortilla flat on a clean surface. Spread about half of the prepared cheesy spread evenly over one half of the tortilla, leaving a small border. If you're adding optional fillings like shredded chicken or beans, layer them over the cheesy spread now.

  3. Arrange two slices of your chosen melting cheese over the cheesy spread and any other fillings.

  4. Fold the unfilled half of the tortilla over the filling to create a half-moon shape. Then, fold the sides of the half-moon inward to create a more compact burrito shape.

  5. Repeat steps 2-4 with the second tortilla and the remaining ingredients. You should now have two neatly folded, half-filled burritos.

  6. Generously spread half of the softened butter onto the top of one folded burrito. Make sure to cover the entire surface.

  7. Heat a non-stick skillet or griddle over medium heat. Carefully place the buttered side of the burrito into the hot skillet.
  8. While the first side is grilling, spread the remaining softened butter onto the exposed top side of the burrito.

  9. Cook for 3-5 minutes per side, or until both sides are a deep golden brown and the cheese inside is completely melted and gooey. You may need to adjust the heat to prevent burning while ensuring the cheese melts thoroughly.
  10. Once perfectly grilled, carefully remove the Easy Grilled Cheese Burrito from the skillet. Let it rest for just a minute before slicing in half, if desired, and serve hot.

Notes

Leftover burritos can be stored in the refrigerator for up to 2 days. To reheat, use a skillet or griddle over medium-low heat for best results. Can also be frozen for up to 1 month.
