- In a small bowl, combine the softened cream cheese, milk or cream, garlic powder, salt, and pepper. Whip with a fork or a small whisk until smooth and well-combined. This creamy spread will add an extra layer of indulgence and help bind the cheese within your burrito.1/4 cup cream cheese, 1 tablespoon milk or heavy cream, 1/4 teaspoon garlic powder, 1 pinch salt, 1 pinch black pepper
- Lay one flour tortilla flat on a clean surface. Spread about half of the prepared cheesy spread evenly over one half of the tortilla, leaving a small border. If you're adding optional fillings like shredded chicken or beans, layer them over the cheesy spread now.2 large flour tortillas, Optional: Cooked and shredded chicken, seasoned ground beef, black beans, or sautéed vegetables
- Arrange two slices of your chosen melting cheese over the cheesy spread and any other fillings.4 slices your favorite melting cheese
- Fold the unfilled half of the tortilla over the filling to create a half-moon shape. Then, fold the sides of the half-moon inward to create a more compact burrito shape.2 large flour tortillas
- Repeat steps 2-4 with the second tortilla and the remaining ingredients. You should now have two neatly folded, half-filled burritos.2 large flour tortillas, 4 slices your favorite melting cheese, Optional: Cooked and shredded chicken, seasoned ground beef, black beans, or sautéed vegetables
- Generously spread half of the softened butter onto the top of one folded burrito. Make sure to cover the entire surface.2 tablespoons unsalted butter
- Heat a non-stick skillet or griddle over medium heat. Carefully place the buttered side of the burrito into the hot skillet.
- While the first side is grilling, spread the remaining softened butter onto the exposed top side of the burrito.2 tablespoons unsalted butter
- Cook for 3-5 minutes per side, or until both sides are a deep golden brown and the cheese inside is completely melted and gooey. You may need to adjust the heat to prevent burning while ensuring the cheese melts thoroughly.
- Once perfectly grilled, carefully remove the Easy Grilled Cheese Burrito from the skillet. Let it rest for just a minute before slicing in half, if desired, and serve hot.
Notes
Leftover burritos can be stored in the refrigerator for up to 2 days. To reheat, use a skillet or griddle over medium-low heat for best results. Can also be frozen for up to 1 month.
