Ingredients
  

  • 1 baguette sliced into 1/2-inch thick rounds
  • 3 tablespoons olive oil plus extra for drizzling
  • 2 cloves garlic minced, plus 1 clove for rubbing
  • 1 (14.5 ounce) can diced tomatoes drained
  • 1/4 cup fresh basil leaves chopped
  • 1 tablespoon balsamic glaze (optional)
  • salt to taste
  • freshly ground black pepper to taste

Method
 

  1. Preheat your oven broiler or grill to medium-high heat. Arrange the baguette slices on a baking sheet or directly on the grill grates.

  2. Broil or grill the baguette slices for 1-2 minutes per side, until lightly golden brown and toasted. Keep a close eye on them as they can burn quickly.

  3. Once toasted, immediately remove the baguette slices from the heat. Take the remaining unpeeled garlic clove and gently rub the cut side of the clove over the surface of each warm baguette slice. This imparts a subtle yet distinct garlic aroma and flavor without being overpowering.

  4. In a medium bowl, combine the drained diced tomatoes, 3 tablespoons of olive oil, and the minced garlic. Stir in the chopped fresh basil leaves. Season the mixture with salt and freshly ground black pepper to your liking.

  5. Spoon the tomato and basil mixture generously over each garlic-rubbed baguette slice.

  6. Drizzle a little extra olive oil over the assembled bruschetta. If using, add a swirl of balsamic glaze over the top of each piece. Serve immediately while the bread is still warm and crisp.

Notes

The tomato topping can be stored in an airtight container in the refrigerator for up to 2 days. The toasted baguette slices can be stored at room temperature in a sealed bag for up to a day.
