Ingredients
  

  • 1.75 cups shredded mozzarella cheese low moisture, part-skim is best for meltability
  • 2 tablespoons cream cheese cubed
  • 0.75 cup almond flour finely ground
  • 1 large egg lightly beaten
  • 1 teaspoon garlic powder optional
  • 0.5 teaspoon dried oregano optional

Method
 

  1. In a microwave-safe bowl, combine the shredded mozzarella cheese and cubed cream cheese. Microwave on high for 60 seconds, stir, then microwave for another 30 seconds, or until the cheeses are completely melted and smooth. Stir until well combined.

  2. Add the finely ground almond flour to the melted cheese mixture. If you're using any optional seasonings like garlic powder or oregano, stir them in now.

  3. Stir the ingredients together with a spatula or wooden spoon until a sticky dough forms. It will be quite challenging to mix at this stage, which is normal! Once it's mostly combined, you can switch to using your hands. Lightly grease your hands with a little olive oil or cooking spray to prevent sticking. Knead the dough in the bowl for 1-2 minutes until it becomes smooth and cohesive. It should be slightly tacky but manageable.
  4. The dough is now ready to be used! You can shape it immediately for your desired recipe. For pizzas, press it onto parchment paper into your desired shape. For bagels, divide into portions and form into rings. For crackers, spread it thinly on parchment paper.
  5. Follow the specific baking instructions for your intended recipe. Most fathead dough creations will bake at around 400°F (200°C) until golden brown and cooked through. This typically takes 10-20 minutes, but watch closely as oven temperatures can vary.

This dough is best enjoyed fresh, but can be refrigerated for up to 3-4 days or frozen for up to 1-2 months.
