- If your Medjool dates feel a bit firm, you can soak them in warm water for about 5-10 minutes to soften them. Drain them thoroughly and pat them dry with a paper towel.1 cup Medjool dates, pitted
- Carefully make a lengthwise slit in each date, creating a pocket. Be careful not to cut all the way through.1 cup Medjool dates, pitted
- Spoon approximately 1-2 teaspoons of creamy peanut butter into the pocket of each date. You want to generously fill the cavity.1/2 cup creamy peanut butter
- Press a few chopped roasted peanuts into the peanut butter filling in each date, mimicking the nougat and peanut layers of a Snickers bar.1/4 cup chopped roasted peanuts
- Place the dark chocolate chips in a small, microwave-safe bowl. Add the tablespoon of coconut oil if using, which helps the chocolate melt smoothly and gives it a nice sheen. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth. Alternatively, you can melt the chocolate using a double boiler.1/2 cup dark chocolate chips, 1 tablespoon coconut oil
- Working one date at a time, dip the peanut butter and peanut-filled date into the melted chocolate, ensuring it's fully coated. You can use a fork or a toothpick to help submerge and lift the dates.1/2 cup creamy peanut butter, 1/4 cup chopped roasted peanuts, 1/2 cup dark chocolate chips
- Carefully place the chocolate-covered dates onto a baking sheet lined with parchment paper. This prevents them from sticking.
- Place the baking sheet in the refrigerator or freezer for about 15-30 minutes, or until the chocolate has hardened completely.
- Once set, your Easy Date Snickers Peanut Butter Chocolate treats are ready to be devoured.
Notes
Store in an airtight container in the refrigerator for up to 1-2 weeks. Can also be frozen for up to 2-3 months.
