  • 1/2 cup creamy peanut butter (natural, no added sugar or oil preferred)
  • 1/4 cup chopped roasted peanuts
  • 1/2 cup dark chocolate chips (dairy-free and vegan if desired)
  • 1 tablespoon coconut oil (optional, for smoother chocolate coating)

Method
 

  1. If your Medjool dates feel a bit firm, you can soak them in warm water for about 5-10 minutes to soften them. Drain them thoroughly and pat them dry with a paper towel.

  2. Carefully make a lengthwise slit in each date, creating a pocket. Be careful not to cut all the way through.

  3. Spoon approximately 1-2 teaspoons of creamy peanut butter into the pocket of each date. You want to generously fill the cavity.

  4. Press a few chopped roasted peanuts into the peanut butter filling in each date, mimicking the nougat and peanut layers of a Snickers bar.

  5. Place the dark chocolate chips in a small, microwave-safe bowl. Add the tablespoon of coconut oil if using, which helps the chocolate melt smoothly and gives it a nice sheen. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth. Alternatively, you can melt the chocolate using a double boiler.

  6. Working one date at a time, dip the peanut butter and peanut-filled date into the melted chocolate, ensuring it's fully coated. You can use a fork or a toothpick to help submerge and lift the dates.
