Salad Components
  • 2 large English cucumbers Sliced into 1/4 inch rounds
  • 1.5 pints Cherry or grape tomatoes Halved
  • 8 oz Fresh mozzarella pearls (Bocconcini) Drained
  • 1/2 cup Fresh basil leaves Roughly chopped or left whole
Dressing & Seasoning
  • 2 Tbsp Extra virgin olive oil
  • 3 Tbsp Balsamic glaze (reduction) Store-bought or homemade
  • 1/2 tsp Kosher salt To taste
  • 1/4 tsp Freshly ground black pepper To taste

Method
 

Instructions
  1. Slice the English cucumbers into uniform 1/4-inch thick rounds and place them in a large mixing bowl.
  2. Add the halved cherry tomatoes and the drained fresh mozzarella pearls to the bowl with the cucumbers.
  3. Gently toss the cucumber, tomato, and mozzarella mixture until evenly distributed.
  4. In a separate small bowl, whisk together the olive oil, salt, and pepper. Drizzle this mixture over the salad and toss lightly to coat all ingredients.
  5. Arrange the salad mixture artfully on a serving platter or individual plates. Scatter the fresh basil leaves over the top.
  6. Finish by carefully drizzling the balsamic glaze over the entire salad just before serving. Serve immediately for the best texture.

Notes

For best results, use high-quality olive oil and very fresh mozzarella. If you don't have balsamic glaze, you can easily make it by simmering balsamic vinegar until it reduces by half and thickens.
