- Prepare the cream cheese spread: In a medium bowl, combine the softened cream cheese, chopped fresh dill, lemon zest, and garlic powder. Mix thoroughly until well combined and creamy. Set aside.
- Toast the bread very lightly (optional): If you prefer a firmer base, lightly toast the pumpernickel bread pieces under the broiler for 1-2 minutes until just barely crisp. Let cool completely.
- Assemble the bases: Spread approximately 1 teaspoon of the dill cream cheese mixture evenly onto each piece of pumpernickel bread.
- Add the salmon: Top each bread piece with a small, folded piece of smoked salmon. Ensure the salmon covers most of the cream cheese.
- Garnish and serve: Place 2-3 thin slices of red onion on top of the salmon. Finish each appetizer with 1-2 drained capers. Serve immediately, or chill for up to 30 minutes before guests arrive.
Notes
These appetizers are best assembled within an hour of serving to prevent the bread from becoming soggy. For variations, substitute the dill with chives or add a small dollop of horseradish sauce to the cream cheese mix.
