- In a large skillet, heat the olive oil over medium-high heat. Pat the beef cubes dry with paper towels and sear them in batches until browned on all sides. Remove the seared beef and set aside.1 tablespoon olive oil, 2 lbs beef chuck roast

- Pour in the beef broth and the dry red wine (if using). Stir in the Worcestershire sauce, dried thyme, dried rosemary, black pepper, and salt. - Cover the crock pot and cook on LOW for 7-8 hours or on HIGH for 3-4 hours, or until the beef is fork-tender and the vegetables are cooked through.
- If you prefer a thicker stew, in a small bowl, whisk together the all-purpose flour and cold water until smooth, creating a slurry. Remove the lid from the crock pot and stir the slurry into the stew. Cook on HIGH for another 30 minutes to an hour, uncovered, stirring occasionally, until the stew has thickened to your desired consistency.1/4 cup all-purpose flour, 1/4 cup cold water
