  • 1 large yellow onion chopped
  • 2 bell peppers any color, chopped
  • 3 cloves garlic minced
  • 1 pound ground beef
  • 1 pound ground turkey
  • 2 (15-ounce) cans kidney beans drained and rinsed
  • 1 (15-ounce) can black beans drained and rinsed
  • 1 (28-ounce) can crushed tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 (10-ounce) can diced tomatoes with green chilies Rotel, undrained
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper optional, for heat
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
  • 1 cup beef broth or water

Method
 

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped yellow onion and bell peppers. Cook, stirring occasionally, until softened, about 6-8 minutes. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.

  2. Add the ground beef and ground turkey to the pot. Break up the meat with a spoon and cook until browned, draining off any excess grease.

  3. Stir in the drained and rinsed kidney beans and black beans. Add the crushed tomatoes, tomato sauce, and the can of diced tomatoes with green chilies (undrained).

  4. Sprinkle in the chili powder, ground cumin, smoked paprika, dried oregano, and cayenne pepper (if using). Add the salt and black pepper. Stir everything well to combine and distribute the spices evenly.
