- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
- In a large bowl, combine the sliced chicken apple sausage, halved Brussels sprouts, apple wedges, and red onion wedges.1 pound fully cooked chicken apple sausage, 1 pound Brussels sprouts, 2 medium Honeycrisp apples, 1 large red onion

- Toss everything together until all the ingredients are evenly coated with the oil and seasonings.
- Spread the mixture in a single layer on the prepared baking sheet. Ensure the ingredients are not overcrowded, as this will steam rather than roast them. If necessary, use two baking sheets.
- Roast for 25-30 minutes, or until the Brussels sprouts are tender and slightly crisp, the apples are softened and slightly caramelized, and the sausage is heated through and lightly browned.
- Midway through the cooking time (around 15 minutes), carefully remove the baking sheet from the oven and toss the ingredients to ensure even cooking and browning.
- Once cooked, remove from the oven and serve immediately.

Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
