  • 1 pound Brussels sprouts trimmed and halved
  • 2 medium Honeycrisp apples cored and cut into 1-inch wedges
  • 1 large red onion cut into 1-inch wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • freshly ground black pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, combine the sliced chicken apple sausage, halved Brussels sprouts, apple wedges, and red onion wedges.

  3. Drizzle the olive oil over the ingredients in the bowl. Sprinkle with dried thyme, garlic powder, salt, and black pepper.

  4. Toss everything together until all the ingredients are evenly coated with the oil and seasonings.
  5. Spread the mixture in a single layer on the prepared baking sheet. Ensure the ingredients are not overcrowded, as this will steam rather than roast them. If necessary, use two baking sheets.
  6. Roast for 25-30 minutes, or until the Brussels sprouts are tender and slightly crisp, the apples are softened and slightly caramelized, and the sausage is heated through and lightly browned.
  7. Midway through the cooking time (around 15 minutes), carefully remove the baking sheet from the oven and toss the ingredients to ensure even cooking and browning.
  8. Once cooked, remove from the oven and serve immediately.
