Ingredients
  

  • 1 pound ground breakfast sausage
  • 8 ounces cream cheese softened
  • 1 (10-ounce) can Original Rotel Diced Tomatoes and Green Chilies undrained
  • 2 cups Bisquick baking mix
  • 1 cup shredded cheddar cheese or your favorite cheese blend
  • Pinch garlic powder Optional
  • Pinch onion powder Optional
  • fresh parsley for garnish, Optional

Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. In a large mixing bowl, add the softened cream cheese and the undrained can of Original Rotel Diced Tomatoes and Green Chilies. Stir them together until the cream cheese is mostly broken down and starts to incorporate with the tomatoes.

  3. Add the ground breakfast sausage to the bowl with the cream cheese and Rotel mixture. Use your hands or a sturdy spoon to thoroughly combine everything.

  4. Sprinkle the Bisquick baking mix and the shredded cheddar cheese over the sausage mixture. If you're using optional garlic or onion powder, add it now. Mix everything together until it's just combined and forms a cohesive dough. Be careful not to overmix, as this can result in tougher sausage balls.

  5. Using your hands, scoop out portions of the mixture (about 1 to 1.5 inches in diameter) and roll them into compact balls. Place the formed sausage balls onto the prepared baking sheet, leaving a little space between each one so they cook evenly.
  6. Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the sausage balls are golden brown and cooked through. The internal temperature should reach 160°F (71°C).
  7. Once baked, carefully remove the sausage balls from the oven. Let them rest on the baking sheet for a few minutes before serving. This allows them to firm up slightly. Garnish with fresh parsley or chives if desired. Serve warm alongside your favorite dipping sauces.

Notes

Store any leftover Easy Cheesy Rotel Sausage Balls in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven at 350°F (175°C) for 8-10 minutes, microwave for short intervals, or air fry at 350°F (175°C) for about 5 minutes.
For longer storage, freeze for up to 2-3 months. Thaw overnight in the refrigerator before reheating.
