Method
 

  1. Gently wash your strawberries under cool running water. Pat them completely dry with a paper towel; this is crucial to ensure the cheesecake filling adheres well. Carefully hull the strawberries by removing the green leafy tops. Then, slice each strawberry in half lengthwise. If you have very large strawberries, you might consider slicing them into thirds to create more manageable "bites." Arrange the halved strawberries, cut-side up, on a serving platter or baking sheet lined with parchment paper.

  2. In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Using an electric mixer (handheld or stand mixer with a paddle attachment) on medium speed, beat the ingredients until they are well combined and smooth. Scrape down the sides of the bowl as needed.

  3. For a lighter, creamier, and more pipeable filling, gradually add the heavy whipping cream to the cream cheese mixture while continuing to beat. Mix until the filling is smooth, homogenous, and has a consistency similar to thick frosting. If you prefer a denser, more traditional cream cheese flavor, you can omit the heavy cream.
